Haw Ketchup

Another seasonal recipe using the bright red berries of the Hawthorn tree that are weighing down the trees at this time of year. The berries are not appetising in their own right (although I often see birds bite them off the tree and adeptly spit out the inner stone) but they can be used to make some worthy sauces and jams. The sauce is sweet with a spicy kick that comes as an after taste. Serve it with hot rich meats such as venison or pork belly.
